Quick & Easy Chicken Cordon Bleu + How to Get Dinner on The Table with Minimal Prep

I’m a work-from-home mom of two toddlers who’s expecting a third baby in only a few months. As much as I love to cook, there’s just no way I can find an hour or two to spare to cook homemade meals every evening. Over the past few years, I’ve learned a few tricks that have made a huge difference in getting a delicious and impressive meal on the table for the entire family with minimal prep time. Today I’m talking about three of my favorite quick and easy tips for getting dinner on the table with minimal prep – even on the busiest days – and sharing how I make a quick and easy chicken cordon bleu, one of our favorite quick and easy meals, with only a few minutes of prep time! 

 

How to Get Dinner on The Table with Minimal Prep

 

Tip #1: Grab easy entrees that take zero prep time.

They’re such a great staple to keep in your pantry because the entree is always the hardest part of dinner, and it’s absolutely amazing to have such a simple main course to prepare when you’re in a rush. In addition to being extremely simple to make, they always turn out absolutely delicious and are easy to pair with a variety of sides to make an amazing and complete meal in minutes.

Tip #2: Make weekly snack trays that double as meal ingredients.


This tip is one of my favorites! Each weekend, I put together a veggie tray, fruit tray, and a meat and cheese tray. I wash, cut, and separate all of the ingredients, so that they can be easily added to snack plates, lunches, and dinners throughout the week with zero effort. In addition to being a quick snack or side dish on their own, these ingredients are perfect for adding to quick dinners!

 

For example, I often make a quick salad by throwing some lettuce in a bowl and adding a mixture of the pre-cut vegetables, fruit, meats, and cheeses from the snack trays and adding a store-bought vinaigrette. It’s so delicious and literally only takes a few minutes to prepare. I can also throw extra vegetables into a pan for a quick stir fry, soup, or addition to pasta or rice. Put on your favorite TV show or podcast and take 30 minutes to make these prepped trays for the week, and I promise your meals for the next few days will be SO much easier!

 

Tip #3: Have ready-to-go sides in your freezer and pantry.


Once my chicken has a few minutes left to cook in the oven and my salad is prepared, I’ll pop a quick frozen side or quick-cooking vegetable in my microwave or air fryer. Some of the items we always keep in stock are frozen rice, frozen vegetables, frozen sweet potato tots, potatoes or sweet potatoes, canned beans, etc. These items all cook in 3-10 minutes with zero prep work or cooking skill. Simply heat, season, and serve!
 

A little bit of pre-planning and weekend preparation can make weeknight dinners a breeze. Your family will LOVE the food, and you’ll love how quickly the meal comes together.
